BizzysBites Vegetable Curry. BUY NOW   /   BUY NOW with rice meal

is a hearty and flavourful dish that showcases the vibrant, fresh produce found in Antigua and Barbuda. It combines a variety of locally grown vegetables and aromatic spices, creating a rich and satisfying curry. The Caribbean’s influence is evident in the use of coconut milk, which gives the curry a creamy texture, while the warmth of spices like curry powder, cumin, and thyme adds depth and complexity to the dish.

This dish is a perfect vegetarian or vegan option, and it can be served with rice, roti, or even on its own as a standalone meal.

Ingredients:

  • 2 tbsp vegetable oil or coconut oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated (optional but adds great flavour)
  • 1 large potato, peeled and diced
  • 2 carrots, peeled and sliced
  • 1 medium sweet potato, peeled and diced
  • 1/2 small pumpkin or butternut squash, peeled and diced (optional but adds a lovely sweetness)
  • 1 bell pepper (red or green), chopped
  • 1 small eggplant (aubergine), diced
  • 1 cup green beans, chopped
  • 1 can (400ml) coconut milk
  • 1 1/2 cups vegetable broth or water
  • 2 tbsp curry powder (preferably Caribbean or mild)
  • 1 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp allspice (optional)
  • 1 sprig fresh thyme (or 1 tsp dried thyme)
  • 1 scotch bonnet pepper, whole (optional, for flavour and heat)
  • Salt and pepper to taste
  • Fresh coriander or parsley for garnish

Instructions:

  1. Heat the Oil:
    • In a large pot or deep skillet, heat the vegetable oil (or coconut oil) over medium heat. Once hot, add the chopped onions and cook until softened and translucent, about 5 minutes.
  1. Sauté the Aromatics:
    • Add the minced garlic and grated ginger (if using) to the pot and sauté for an additional minute until fragrant.
  1. Add the Vegetables:
    • Add the diced potato, sweet potato, carrots, and pumpkin (or squash) to the pot. Stir well to coat the vegetables in the oil and aromatics, and cook for about 5-7 minutes to start softening them.
  1. Spices  Seasoning:
    • Sprinkle in the curry powder, turmeric, cumin, and allspice (if using). Stir the spices into the vegetables, ensuring they are evenly coated. Add the fresh thyme and whole scotch bonnet pepper (if using), being careful not to cut the pepper so that the heat is controlled.
  1. Add Coconut Milk and Broth:
    • Pour in the coconut milk, followed by the vegetable broth or water. Stir everything together, making sure the liquid covers the vegetables. Bring the mixture to a simmer.
  1. Simmer the Curry:
    • Cover the pot and reduce the heat to low. Let the curry simmer for about 25-30 minutes, or until the root vegetables (potato, sweet potato, carrots) are tender. Stir occasionally to ensure nothing sticks to the bottom.
  1. Add the Remaining Vegetables:
    • Once the root vegetables are tender, add the bell pepper, eggplant (aubergine), and green beans. Stir well and cook for another 10-15 minutes until all the vegetables are tender and the curry has thickened.
  1. Final Adjustments:
    • Taste the curry and adjust the seasoning with salt and pepper as needed. If the curry is too thick, you can add a bit more vegetable broth or water to reach your desired consistency.
  1. Serve:
    • Remove the scotch bonnet pepper if it has been used (it will have an imparted flavour without being too spicy). Garnish with fresh coriander or parsley for a burst of colour and freshness.
    • Serve the Antiguan vegetable curry with rice, roti, or even a side of fried plantains for a well-rounded meal.

Notes:

  • Coconut Milk: The use of coconut milk in this dish is essential, giving it a creamy and slightly sweet texture that balances the spices. You can use light coconut milk if you prefer a lighter version.
  • Scotch Bonnet Pepper: The scotch bonnet pepper adds heat and depth of flavour. You can remove the pepper before serving if you prefer a milder curry or leave it in for an extra spicy kick.
  • Vegetable Variations: You can add or swap in any vegetables you prefer or have on hand, such as zucchini, okra, or peas. The beauty of a vegetable curry is its versatility.
  • Protein Options: While this is a vegetarian dish, you can add protein like chickpeas, tofu, or even chicken if you prefer.

BizzysBites Vegetable Curry is a delightful and hearty dish that captures the essence of Caribbean cooking—flavourful, comforting, and nourishing. The combination of fresh vegetables, aromatic spices, and coconut milk creates a harmonious and satisfying meal.
